Saborea Winter Party 2025

Chef Roberto Cátala participated in the Saborea Puerto Rico Winter Party, one of Puerto Rico’s most prominent culinary events, alongside chefs and industry professionals from across the island.

The event provided a space to reconnect with peers and engage with colleagues from different culinary backgrounds, fostering an environment of collaboration and shared experience within the industry.

During the live culinary presentation, a 130-pound Bluefin tuna was broken down and prepared in several formats, including sashimi, tuna tiradito with passion fruit leche de tigre, and tuna tartare served over kimbugak (Korean fried seaweed snack). The presentation emphasized technique, product respect, and contemporary culinary influences.
